When mixed units, say close order spears and bow infantry, make a 90 degree turn, do the ranks  turn  spear to the front and bow 2nd rank or two separate columns one of spear and one of bow?

They form up into the same front rank/rear rank formation they were in before.
Don't think of it as a single block of troops but as a cluster of small units working together, like a Brigade. When they turn the units are still in their normal formation and so, the UG has the same front rank/rear rank composition it always had, but now different sub-units are at the front.

I believe a unit turning 90 can also redress ranks, so you can decide which elements form the front rank after you have turned.
Might be worth getting Simon to confirm this.
