Why do the feudal lists have so many knights average then that at this time, it is precisely the knights who dominate the battlefields of Europe and the Middle East?

Because Average knights who are Charging Lancer, Devastating Charger, Melee Expert are pretty formidable. Having more as Superior would over egg them.

Personally, I like the fact that being French, Polish, or Serbian does not automatically make you Superior, as it often did in past rules sets. OK, many French knights are and should be Superior, but not all.
