I was looking at the Three Kingdoms Chinese lists today and noticed that Shu didn't list a historical enemy for the Nanman tribes that Zhuge Liang subjugated during his southern campaign. What would be a good list, if any, to represent them?

There is something of a gap in the lists for tribes south of "main" Chinese settlement - I think we commented on it in one of the more recent podcasts. So I think the answer to your question is that there isn't really one I'm afraid. I'm sure any suggestions as to what one might look like would be appreciated  8)

Ha! Unfortunately all I'd have to go on is what it says in the Romance of the Three Kingdoms, and as I recall they use wild tigers against the Shu forces in those books, so I'm not confident in their historical value  ;D
