In the Trastamara Spanish and Pre Cordoba Trastamara Spanish it is not specified in the notes what the Italian Elmeti dismount as.

In the Italian States list Italian elmeti dismount as Drilled Close, Average, Fully Armoured, 2-H Cut & Crush.

Should it be the same for the Spanish lists?

I can't see anything on the Spanish lists in the 2021 errata.

Am I just being blind or looking in the wrong place? 

I think this is the line you are looking for:

Medieval - Italian Wars - Pre-Cordoba Trastamara Spanish and Trastamara Spanish.  Italian Elmeti dismount as Drilled Close, Average, Fully Armoured, 2-H Cut & Crush (Poor if downgraded to Poor).
