The army is entitled to a french contingent, mounted knights superior, CL, DC, melee expert AND dismountable

But there is no description as to the troop type they become

Usually other knights do dismount as FARM, average 2 HCC

Due to the lack of specification in the list they should dismount as per rule and pg 129 :

FARM, superior, combat shy, LS

Which seems rather odd

Suspect it is an omission, but as it stands, yes, they dismount as per the rules definition.
