You can downgraded any UGs Quality and Shooting Skill by one level but as demountables have fixed stats you may can gain a points advantage by downgrading the mounted and deploying dismounted EG.
English knights- Cavalry, Average -/Fully Arm, Charging Lancer, Devastating Chargers and Dismountable 153 points each.
Dismount as Formed Close, Average, Fully Armoured, 2-H Cut & Crush (135 pts each)
If you take them as a downgraded mounted Poor they are 92 points each but still dismount as Formed Close, Average, Fully Armoured, 2-H Cut & Crush.
Something to think about for next years lists?

Careful - some lists specify that the troops dismount at a lower quality level than they are when mounted (Superior mounted to Average on foot).

I think one or two even deliberately go up when they dismount (eg Swabians?). Presumably because they weren't really that comfortable on a horse and did better dismounted

I think that would actually be a great mechanic. It's completely natural some would feel more comfortable while dismounted. Horseriding is not a skill everyone was great at.
It would be a
"unless stated otherwise inb specific lists .... troops .... dismount at same grade and skill".
